NEW! Introducing Old New Mexico Red Enchilada Sauce This sauce isn’t newer style "New Mexican Cuisine," and it sure ain’t Tex-Mex, y’all! Betty took a 1960’s era mimeographed Roosevelt County New Mexico cookbook, updated and modified the enchilada sauce recipe and then set about to create an homage to the long-closed (1934-1997!) El Monterey Restaurant in Clovis, NM. John (willingly) served as her “lab rat.” What Betty has now perfected is an enchilada sauce that will make you swear you are back in a 40’-50’s New Mexican diner! You can almost smell the aromas coming from the kitchen as waitresses in flowing, embroidered flowery skirts move between the tables with trays of food. And if you never visited one of those, you are in for a culinary delight from days long past. Thus the name: "Old New Mexico Enchilada Sauce." One package makes at least enough sauce to pour over & through a large enchilada casserole, or a whole bunch of stacked enchiladas. And make them stacked with blue corn tortillas to reach enchilada nirvana (if there is such a thing)!
